The other day while I was watching the Today Show on Direct tv Centennial, a Thanksgiving themed cooking segment came on. I had mentioned to my mom this year that I wanted to make a dessert to bring since I wasn’t really a big fan of pumpkin pie, or pie in general for that matter. She used to make pumpkin cheesecake on occasion and I was craving it, so I offered to make it since I much preferred cheesecake to pie. I had never made cheesecake on my own, I had only helped my mom; so, I paid close attention to the Today Show segment since they were making one. I wasn’t married yet, so I hadn’t gone through the whole wedding registry gifting process. Therefore, I did not yet have a fully stocked kitchen that would make this effort much easier. I only had a hand mixer, not a KitchenAid and I also did not own a springform pan. I decided that I’d still take on this challenge since I knew that my mom would have a pumpkin pie as dessert backup in case of disaster.
